Blog Block Blues


I have three posts half written, but can't bring myself to finish any of them. They're either of heavy subject matter or of the "walk-down-memory-lane" ilk. I'm not in a "heavy" mood, and I really don't feel nostalgic.

I also have the REALLY-don't-want-to-heat-up-the-kitchen blues, also known as "what ARE we going to have for dinner?" Something fast. Something easy. Something tasty. Something healthy. Maybe even something cold. It IS 327 degrees in the shade here, ya know.

That all got me to wondering if I'm the only one feeling like that. (I know I'm not. I inherited the gene, so there are at least a couple other people on the planet like that.)

What are some of your favorite quick 'n' easy summer meals?

Help a girl out. Send me some lovin'... and some ideas/recipes.

Is there such a thing as: fast, easy, tasty, healthy all in one dish. Ummmm...NO.

I can tell you what I'm eating right now and it's tasty, healthy, easy...well it's all that.

Cottage cheese and pineapple. I love cc and tomatoes but I was in a sweet mood.

This will not help you if it's not of your tasting.

I love a dinner of fresh tomatoes and corn on the cob.

Quick and easy: I created it on my own. It's called Paula's chicken rice.

Box of chicken flavored rice, chunks of chicken, sour cream.

Make the rice as directed on the box, boil chicken and shred/chunk it. Add chicken to finished rice and add lots of sour cream. Almost a whole 16 oz tube...about 2/3 anyway.

It would be quicker if you already had left over chicken cooked.

Back to my yummy cottage cheese...granted I go in spurts and I think this cottage cheese is so good because I've not had it in months!!

Anything anyone else is cooking is my favorite. LOL.

Go to Sam's, there is nothing that they sell that isn't fast and good. It is up to you to find the healthy. They have a lot of frozen fish that can be fixed in 30 min or under.
Corn on the cob is on sale at the stores.
Strawberries are great right now.

If you've got a crockpot, then I have plenty of quick and easy recipes. Toss a few ingredients in the crockpot in the morning and when you get home from work, it's ready for you. You simply must use crockpot liners though(best invention in crockpot history!), unless you love to clean out a crockpot...which I don't. My favorite recipe right now takes about an additional 20 minutes besides the main cooking time.

Crockpot Salsa & Sour Cream Chicken with "Mexican" Rice

4 Frozen boneless, skinless chicken breasts, your favorite salsa, 16 oz. container sour cream (fat free or light is fine too), and long cooking rice.

Place liner in crockpot. Toss in frozen chicken breasts and pour about 1 cup salsa over them. Set your crockpot on low and leave it for 6-8 hours.

When you're nearly ready to eat, remove 1 cup of salsa juice and put in medium sauce pan with a cup of water. Bring to a boil and add 1 cup long cooking rice. Place lid on saucepan, turn down to simmer and let cook for 20 minutes until all liquid is absorbed in rice.

Remove chicken breasts from crockpot and mix together sour cream with remaining liquid. Replace chicken breasts into crockpot and stir to coat chicken with sour cream sauce.

When rice is cooked, fluff rice with fork and serve with chicken and sauce (I like sauce on both the chicken and the rice.)

Do you mean, you need something OTHER than that dreamy-creamy chicken salad from Costco?? If that doesn't solve every problem in the world, then there's tuna salad with lots of hard-boiled eggs. We also cruise Kroger for sushi. Remember that fall will be here before we know it...

Let others do the cooking for you. Like rotisserie chicken.
Popsicles are good,too.
I don't have postable blogs either, so I understand that. Maybe our brains are cooked?
